Set the Sales Tax rate that is appropriate to your country from the System Set Up  - Tax Rate Link

When you create a customer there is a GST check box that is checked on by default. If you are dealing with an international customer you will need to check the box off so that GST is not charged to them

GST gets automatically added to product sell prices and is shown separately on Sales orders.
